How to Make Kantun Ridi (Sesame Seed Candy)

Kantun Ridi is one of the numerous local snacks that we have such as Balla Kabo, Kwakumeti, Hanjin Ligidi, and Alkaki. It is called Sesame Seed Snack, Crispy Sesame Bars, or Sesame Seed Candy in English. It is mainly made from ridi (sesame seeds), honey, and sugar. In this article, I will be showing you how to make Kantun Ridi in a very easy way.

It will interest you to know that not only children like this snack as many people think, but a good number of adults love it too, most especially women.

How to Make Kantun Ridi (Sesame Seed Candy)

Equipment

Foil sheet
Rolling stick
Frying pan
Wooden spoon
Bowl
Sieve
Tray
Knife

Ingredients

3 cups of ridi (sesame seed)
1½ cups of sugar
Lemon juice
Half cup of honey (optional)
A little vegetable oil

Procedure for Preparation of Kantun Ridi

STEP 1: Pour the ridi into a bowl and add water to it. Wash it thoroughly, and ensure that you remove the bad ridi.

STEP 2: Drain the water completely and spread it on a flat surface, such as a tray, to dry.

STEP 3: Put the frying pan over medium heat and allow it to get hot.

STEP 4: Now pour all of the ridi into the frying pan and stir continuously for 10 minutes.

STEP 5: Turn off the cooker and spread the ridi on a flat surface, allowing it to cool completely.

STEP 6: Put back the frying pan over medium heat and add the honey, sugar, and a little lemon juice, and stir continuously until the sugar has dissolved completely and is thick.

STEP 7: Begin to pour the ridi into the frying pan gradually and stir as you do so. It will begin to stick to the dissolved sugar. Do so until all the ridi is exhausted.

STEP 8: Remove the frying pan from the heat and set it aside. Now get the foil paper, spread it on a flat surface, and rub vegetable oil on it before pouring the fried ridi (sesame seed).

STEP 9: Use another foil paper to cover the fried ridi and use the rolling stick to roll over the ridi until it becomes flat and thick as desired.

STEP 10: Now uncover the fried ridi and use a knife to cut it into your desired shape.

How to Serve Kantun Ridi

It is served on a plate and eaten with one’s fingers. You could take it alone or together with water or drinks such as Zobo, and Kunun Aya.

To the best of my knowledge, Kantun Ridi has no occasion specifically attributed to it. Nevertheless, you could serve it on any occasion you want.

The consumption of this snack can be done at any time, so just enjoy it.

How to Store Kantun Ridi

If properly stored in a covered container and away from children and dirt, it could last for many days and still retain its original taste.

Health Benefits of Kantun Ridi

Ridi is a good source of fibre. It also lowers cholesterol and triglycerides, and blood pressure. In addition, it is a good source of vitamin B and controls our blood sugar, among other things.
